RECIPES You will notice that the following recipes look more like guidelines, they are plant based, have almost no added oils, consist of a great variety of whole foods in a rainbow of colors, and are rich in vitamins, phytochemicals, antioxidants, protective nutrients, and fiber.  Experiment with them.  Focus on better nourishing yourself and your family.

This multicolor dish makes a great Sunday breakfast. The bland white tofu block picks up companion flavors. In this recipe we use it as a nourishing base for delicious and nourishing plants.


1 pound block of extra firm tofu (depending on the processing it can be a good source of calcium)


1 tablespoon olive oil dyed yellow with annato (achiote) seeds, discard them after they release their color.


teaspoon turmeric


1 teaspoon paprika


1 chopped pepper


1 chopped small onion


1 carrot sliced


6 leaves of kale or 1/2 head of broccoli florets


1/2 can diced tomatoes


1/2 cup sliced mushrooms


1/2 cup green peas (fresh or frozen)


1 chopped bunch of cilantro


Discard the tofu water, mash the block and scramble it in a hot skillet until somewhat dry. Add the yellow oil and other ingredients. Reserve the peas and cilantro for last to keep them from losing their beautiful intense color. Season the scramble with salt and pepper. Sprinkle with almonds or chopped walnuts and decorate with sliced olives and capers.

   REVOLTILLO DE TOFU  

Este plato multicolor y sabroso se presta para un desayuno de domingo, o para acompañar otras verduras.  El bloque de tofú, que es blanco y no tiene mucho sabor propio, es una buena fuente de proteína vegetal.  En esta receta lo usamos como base nutritiva para varias otras plantas alimenticias y deliciosas.  


1 bloque de una libra de tofú extra firme majado (algunos son buena fuente de calcio dependiendo del proceso usado)


1 cucharada de aceite de oliva teñido de anaranjado con semillas de achiote (descarta las semillas)


1 cucharadita de turmeric


1 cucharadita de paprika 


1 pimiento picado


1 cebollita picadita


1 zanahoria en rebanadas


6 hojas de kale o media cabeza de brócoli picados


1/2 lata de tomates picados


1/2 taza de hongos en rebanadas


1/2 taza de guisantes verdes (frescos o congelados)


1 mazo de cilantro picadito


Descarta el agua del tofu, májalo, y revuélvelo en una sartén caliente hasta que se seque un poco.  Añade el aceite teñido de amarillo y demás ingredientes, reservando los guisantes y el cilantro para el final de modo que no pierdan el color verde intenso.  Sazona el revoltillo a gusto con sal y pimienta.  Puedes salpicarlo con almendras o nueces picadas y adornarlo con aceitunas y alcaparras.
